Breakfast

Chicken-Stuffed Avocado (recipe here)

Don't know about you but I love avocado. I love it with everything and in any flavor.

Today's clean eating breakfast was an avocado stuffed with chicken and eggs. It was full of protein and wholesomeness, and tasted fantastic.

Mid Morning Snack

 Prosciutto and Mozzarella Cheese Wrap (recipe here)





Lunch

Stir Fry Tofu and Celery (get recipe here)

A meatless lunch is a nice change.

This tofu stir fry was a fantastic meatless idea. It was healthy, tasty and refreshing. I laid it over organic brown rice, and enjoyed every bite.

Afternoon Snack

KIND Snack Bars (from here)

Have you tried KIND Bars? They are awesome. With no artificial ingredients at all, these snack-able clusters both taste good and are good for you.

Oh. Speaking of tasting good, they really are delicious. Perfect snack for the middle of afternoon.


Dinner

Baked Chicken and Leek in Korean BBQ Sauce (recipe at this link)

If you like Korean BBQ, you'll like this sweet and tasty recipe. Surprisingly, it was easy to make too.

I especially liked the combination of chicken in naturally-sweetened sauce, made with real fruits, and how it was baked with earthy-tasting leeks.

Maple-Flavored Steel Cut Oats with Banana Slices (recipe here)

What's so good about steel cut oats?

Well, besides the fact that it's low in caloric value (about 150 - 170 calories per 1/4 cup), it contains a variety of nutritious whole oat groats, and can be eaten alone or used in baking. Its healthy benefits make it a perfect clean eating food--and I love how it's versatile as well.

Today's clean eating breakfast was warm, hearty and slightly sweet! It was wonderful.

Mid Morning Snack

Baked Apple Slices with Blue Cheese, Dates and Pistachios (recipe here)

This snack contained a fusion of flavors: spicy blue cheese, juicy apple and sweet dates. Every bite exploded with taste. You should absolutely give this combination a try.

Lunch

Clean Eating Spicy Tuna Melt (get recipe here)

This tuna melt was full of flavor. Love tuna in the first place, but with spices, it was even better. Plus, it was quick to make.

Herb-Rubbed Chicken Broil (get recipe here)

You have no idea how easy this chicken recipe was to make. It took less than 30 minutes, and tasted wonderful! The chicken was tender, moist and full of herbs. You'll love this as a weeknight dinner idea.

I enjoyed my chicken over fresh salad. Of course, it would have been great with a side of steamed vegetables too.

Breakfast

Toasted Whole Wheat Naan Topped with All-Natural Nut Butter, and a Side of Avocado Slices

Naan is a flat bread originated from West, Central and South Asia. It's normally cooked in tandoor, and composes mainly of milk and yogurt. It's fluffy, tender and delicious.

Although today's clean eating breakfast used store-bought whole wheat naan, it still tasted great. I slightly toasted each piece, and topped with Wild Friends All-Natural Almond Butter. It was a delicious and filling breakfast.




By the way, if you haven't tried Wild Friends Nut Butter, you must! The brand uses all natural ingredients, and has amazing flavors. Today's Vanilla Espresso is just one of my favorites.


Mid Morning Snack

Fresh Peach Slices




Lunch

Shrimp Salad

Very simple clean eating lunch today: just add cooked shrimp to a bed of lovely greens. Then drizzle your favorite dressing on top, and enjoy.

Breakfast

Whole Wheat Toast with All-Natural Peach Preserves

The peach preserves consisted of only two ingredients: all-natural brown cane sugar and ripe peaches. 

Best preserves I've ever had! 

If you can't make your own, there are many choices at health food stores. Regardless, this clean eating breakfast was sweet and filling. A great way to start the day!



Mid Morning Snack

Coconut-Hinted Banana Peanut Butter Smoothie (recipe here)

A few banana slices, a little bit of all-natural peanut butter, a hint of coconut and a healthy splash of chia seeds--YUM!

Loved this sweet treat. Give it a try at Banana Peanut Butter Smoothie.




Lunch

Chicken Parmesan Salad with Bolthouse Yogurt Dressing

If you haven't tried Bolthouse dressing, you're missing out. It's made with Greek yogurt, and has 1/2 the fat as regular salad dressing. But it still has all the flavor. It's all I use on salads now.

Bolthouse offers an assortment of flavors, but my favorite is still classic ranch.





Afternoon Snack

Rainbow Slaw Stir Fry (from this recipe) and Bok Choy Over Organic Brown Rice
